     For Marinating the Chicken:

  • 500g chicken (with bone, curry cut preferred)

  • ½ cup thick yogurt (curd)

  • 1 tbsp ginger-garlic paste

  • 1 tsp red chili powder (adjust to taste)

  • ½ tsp turmeric powder

  • Salt to taste

  • 1 tbsp lemon juice

  • 1 tbsp oil

       For the Gravy:

  • 2 large onions (sliced)

  • 3 large tomatoes (pureed)

  • 1 tbsp ginger-garlic paste

  • ½ cup fresh cream (or ¼ cup cream  + ¼ cup milk)

  • ¼ cup cashews (soaked for 15 minutes and blended to paste)

  • 2 green chilies (slit)

  • 1 tsp Kashmiri red chili powder (for color)

  • 1 tsp coriander powder

  • ½ tsp cumin powder

  • ½ tsp garam masala

  • 1 tsp kasuri methi (dry fenugreek leaves)

  • Salt to taste

  • 2–3 tbsp ghee or oil

  • Fresh coriander leaves (for garnish)



Step-by-Step Chicken Changezi Recipe

     

Step 1: Marinate the Chicken

  • In a bowl, mix yogurt, ginger-garlic paste, chili powder, turmeric, salt, lemon juice, and oil.

  • The chicken should be well covered with the mixture.

  • Cover and let it marinate for at least 1 hour (overnight for best flavor).

   It is important to keep the chicken inside the refrigerator to marinate. The marinade relaxes the fibers of the chicken, making it soft and also enhances its flavor. 



    Step 2: Cook the Marinated Chicken

  • A deep cooking pan requires 1 tbsp of heated oil.

  • Heat the mixture with tomato puree until the oil splits off (takes approximately 8-10 minutes).
  • Continue cooking the content with cashew paste for another 2 to 3 minutes.

    


   Step 4: Spice it Up!

  • Place chili powder with coriander powder, cumin powder and salt into the mixture.

  • Stir the mixture properly while roasting the spices for 2 additional minutes..

Step 5: Add Cream and Chicken

  • Combine fresh cream with the mixture while gently stirring it.

  • Place the partially cooked chicken pieces into the gravy mixture.

  • The low-flame heat should be applied for 10-15 minutes until both the chicken and tenderness are achieved.

     


Step 6: Finishing Touches

  • Add dry fenugreek leaves and garam masala.

  • Simmer for 2-3 minutes.

  • Garnish with chopped coriander leaves.
